Green soup with semi-whipped cream

An elegant appetizer: soup of Sweetgreen pepper with coriander, croutons and semi-whipped cream

Preparation:

Ingredients:

  • 3 Sweetgreen peppers
  • 1 clove of garlic
  • one half onion
  • bay leaf
  • 6 dl vegetable stock
  • coriander
  • chervil 
  • 1 dl cream 
  • 2 slices brown bread
  • table salt
  • freshly ground pepper

Slice the sweet green pepper in squares of 3 x 3 cm. Heat a little olive oil in a pan, and lightly fry sweet pepper, onion, garlic and bay leaf; cover with vegetable stock. Simmer for 30 minutes on low heat, then puree and strain. Add salt and pepper to taste. To make croutons, slice the brown bread in squares and fry them in the olive oil. Garnish with a scoop of semi-whipped cream and finish with finely chopped coriander and the croutons.
